Hong Kong Style Mutton Curry
Superbly delicious.
Local mutton with that perfect Asian flair - doable in your own kitchen and can feed up to 4!
Ingredients
Diced Mutton 450 g
Vegetable Oil 15 ml
Carrots, diced 80 g
Onion, chopped 175 g
Garlic, chopped 30 g
Ginger, chopped 30 g
Garam Masala 10 g
Chinese 5 Spice Powder 5 g
Chopped Tomatoes 400 g
Chinese 5 Spice Paste 60 g
Soy Sauce 15 ml
Chinese Curry Sauce Mix 50 g
Oyster Sauce 15 ml
Water 1 L
Jasmine Rice 175 g
Method:
1. Heat oil in a pot over medium heat
2. Saute onions, carrots, and celery (optional if available) in oil until the onion sweats. This will take about 3 to 5 minutes.
3. Add dry spices until mixture becomes fragrant.
4. Add cracked peppercorns and half a teaspoon salt, chopped garlic and ginger and saute for further 3 minutes.
5. Add tinned chopped tomatoes You may also use fresh tomatoes if available. Saute for another 3 minutes.
6. Add diced mutton and saute for another 5 minutes in low heat.
7. Add Chinese five spice paste, water, and soy sauce. Bring to a boil then simmer in low heat for an hour or until the meat is tender.
8. Add the curry paste mix and oyster sauce. Mix and simmer until the sauce thickens for about 5 to 10 minutes.
9. Serve over warm rice and top with chopped fresh coriander (if available)
